My life has been chaos lately.
Complete & Utter CHAOS.
But I am okay with that because it is all in the name of good things happening!
I have FINALLY opened my very own training facility called THE STUDIO. More to come on that subject.
I am getting more clients & adding group classes and personal training sessions; I am keeping up with my existing clients, getting my marketing together, working on developing the brand identity AND my mother is in town from America renovating her apartment she bought here, which my husband and I have been heading up AND we just bought our first place together & have been working through the challenges of all that…. OMG DEEP BREATHS!!! hahaha.
∴OOOOMMMMMMMMMMM….. Center myself!∴
No but honestly, I love it! .. And as my father has always said to me, “Busy Hands Are Happy Hands!”
ANYWAY MOVING ON…
I am writing this though because what is the one thing that always takes a back seat first when you are running all over town trying to be a dog mom, house flipper, wife & business owner?!!?
YOUR DIET. Yep.
So I have to plan ahead as best I can to fill those time gaps when going home to make food or running to a shop to grab something just isn’t possible!
My favourite food right now that is filling & super nutritious but also a great energy breakfast snacks are these delicious BLUEBERRY OATMEAL SUPERFOOD BARS!
So let’s get right into the recipe so you can make these incredibly yummy bars to keep on hand when it is needed!
BLUEBERRY OATMEAL SUPERFOOD BARS
INGREDIENTS:
Base:

2 Cups Old Fashioned Oats
-
1 Cup Slivered Almonds
-
1 Tbsp Coconut Oil
-
1 tsp Salt
-
4 Tbsp Honey
-
1 1/2 tsp Cinnamon
-
2 Bananas
-
1 1/2 tsp Vanilla
-
1 Scoop Vanilla Whey Protein Powder
Topping:
-
1/2 Cup Old Fashioned Oats
-
1/4 Cup Slivered Almonds
-
1/4 Cup Pumpkin Seeds
-
1 Cup Fresh Blueberries
-
1/4 Cup Unsweetened Almond Milk
-
1/4 tsp Cinnamon
DIRECTIONS:
Base:
-
Preheat over to 175°C / 350°F
-
Line a 9×9 inch / 23×23 cm baking pan with parchment paper, lightly grease with coconut oil

Add all the ingredients into a food processor until completely blended & wet
-
Pour into baking pan & smooth out till evenly distributed
-
Bake for 8-10 minutes.
Toppings:
-
Put all ingredients into medium bowl and stir to combine
-
Remove baking pan from over, spread topping evenly over base & lightly press into base
-
Bake an additional 15 minutes
These can be stored in a sealed container for up to a week in the refrigerator.
×Tip: This is also super delicious to warm up & top with a scoop of Nice Cream for dessert at night!
