BLUEBERRY FLAPJACK WEEKENDS AWAY!
This weekend my husband and I celebrated our 3 YEAR ANNIVERSARY… since we started dating! We went away to the beautiful town of Knysna, South Africa for the long 4 day weekend. We are staying in this gorgeous villa called Two Angels, styled after a classic country Italian villa & sitting directly on the lagoon. It exudes that warm worn in feeling, with rustic colours splashed across the walls & wooden floors that creak when you walk across them. I love it!
DREAMY TURQUOISE KITCHEN…
One of my favourite parts of this gorgeous home is the turquoise blue kitchen lined with copper pots and pans, which pop against the neon pink flowers blooming outside the windows. There is a warmth and coziness to it that can not be described. It was a kitchen that was begging to be cooked in. So along with our usual scrambled eggs & toast, I couldn’t help but envision flipping beautiful healthy blueberry flapjacks on the inviting green gas stove top. It was the perfect treat to accompany this chilly rainy Sunday winter weather that arrived on our last morning here! All we need now is a warm cup of coco & a good cuddle, while listening to the rain come down. ♥
So here it is, my snuggle up & eat, HEALTHY BLUEBERRY FLAPJACKS!
INGREDIENTS:

1/2 Cup Rolled Oats

1/2 tsp Baking Powder

1/2 tsp Cinnamon
-
1 Medium Ripe Banana
-
2 Egg Whites
-
1/4 Cup Greek Yogurt
-
2 Tbsp Almond Milk
-
1/2 tsp Vanilla Extract
-
Handful or 2 of Blueberries
-
Optional: 1 Scoop of Vanilla Whey Protein Powder
DIRECTIONS:

Put all ingredients, except blueberries into a blender and blend until oats are broken down & everything is mixed together thoroughly.

Preheat skillet over medium heat and coat with non-stick spray or oil & ensure the pan is fully heated before you start cooking your flapjacks.

Throw blueberries into pre-mixed batter and give a light stir in order to incorporate the berries into the batter nicely.

Ladle 1/4 Cup scoops of batter onto hot skillet. Cook until edges begin to lightly brown/look dry and the middle begins to bubble, then flip.

Cook for an additional 1-2 minutes.

Continue this process till you have cooked all the batter or till you have reached desires amount of flapjacks. Be sure to coat pan with spray or oil between each flapjack.
