WHO DOESN’T LOVE GRANOLA?!
I often crave granola with some fresh fruit & yogurt in the mornings. ♥
However, all I ever hear about is how much sugar is in store bought granola; because of this I tend to just settle on eating eggs & toast everyday, which can get pretty boring.
Keeping With The Cleanse
This last week I did a The Skinny Juice Co. 3 day juice cleanse and by the end of it I really felt like staying on the whole fruit & veg vibe for a few days after. I really didn’t want to buy granola for fear that it would basically just completely cancel out the whole purpose of the cleanse, being loaded with sugar & all, so I finally came to the realisation I just need to make my own!
Hunt, Gather, Create!
I went around the store & gathered all my favourite ingredients that I would love to have in my Perfect Granola, went home & created this DELICIOUS HOMEMADE HEALTHY GRANOLA RECIPE!
It is super clean, simple & fun to make! You can personalise it however you want, with all YOUR favourite ingredients!
This one is packed with superfoods such as oats, pumpkin seeds, almonds & dates!

INGREDIENTS:

2 Cups Old Fashioned Oats

1/2 Cup Pumpkin Seeds

1/3 Cup Whole Raw Almonds (Roughly Chopped Up)

1/4 Cup Flaked Almonds
-
6-7 Dried Pitted Dates (Chopped Up Into Little Pieces)

Handful of Goji Berries
-
1/2 – 1 Whole Banana (Mashed Up First)

1/2 Tsp Vanilla Extract
-
1 -1.5 Tsp Powdered Cinnamon
-
2 TBSP Raw Organic Honey
-
1/3 Cup Virgin Organic Coconut Oil (Melted)
DIRECTIONS:

Preheat oven to 180°C.

Take a large mixing bowl combine Ingredients 1-10 above & mix till completely blended.

Combine 1/3 cup melted virgin organic coconut oil with granola mix.

Take a bake tray with a lip around the edge and line with baking paper.

Pour granola mixture onto tray and spread evenly across. Place in the oven and bake for 10 minutes.

Remove tray from oven, stir granola & bake for an addition 5-10 minutes until golden.
